Fresh Green Juice from Baby Spinach, Grapes and Pears

With one leg out the door, packing and getting ready for my trip to Europe  – on the first flight tomorrow morning. And, …. I am also making green juice,why?  Because, I love it and it’s easy, so why not?  But also, to stay hydrated, nourished and survive jet-lag before it even arrives.

Lots of freshly squeezed green juice helps my body prepare for the trip across time zones. But you don’t have to be travelling to benefit …from freshly squeezed green juice.

Freshly squeezed green juice is so packed with vitamins , minerals and nutrients that you can almost feel every cell in your body wriggle with joy and gratitude, as you drink it!

It’s easy to prepare and it tastes so good. Children love it and it’s a great way for us to sneak in some of the greens that we know are so good for us!

The power of natural

This time of year is prime time for colds and flus –  people are heading for their flu-shots trying to  prevent the dreaded symptoms of flu, headaches, aching bodies, sneezing and endless running noses.

At the checkout counter in the supermarket we find not only candy to tempt us, but also bags of vitamin C powder that magically is supposed to help us fight the flu.

In my life instead of pills, tablets and bags of vitamin C,  I prefer boosting my immune system the natural way, with freshly squeezed delicious juices – that are naturally packed with fresh vitamins and minerals. Like this one, for instance, freshly squeezed carrot juice with apples, lemon and ginger, made with all fresh organic ingredients.  Carrots, filled with vitamin A, organic local apples filled with fibre, minerals, and vitamin A, B1, B2, B6, C, E, K, as well as loaded with antioxidants.  Slices of fresh ginger that are packed with goodness and always has been known and praised, for its medicinnal powers to cure all kinds of ailments such as nausea, colds etc

Along with freshly squeezed lemon, with its high content of vitamin C and  its power to clear up colds. This is a seriously healthy drink which tastes delicious at the same time!

I believe this is so much more powerful than any vitamin supplement,  it’s natural, fresh and potent. A perfect way to boost our immune system naturally.

A summer tradition – as soon as the elderberry trees starts blooming, I am on a mission.

I get out early in the morning while the sun is rising and the mist hangs low on the fields, to pick the beautiful white and deliciously smelling flowers.  It’s a Danish tradition, we look at it as a confirmation of summer – the elderberry flowers are blooming and the first strawberries are ready. Then I know summer is here!

Since I moved to the West Coast of Canada I have not seen any Elderberry bushes anywhere. Last year I told my friend how much I missed that tradition and she said – “but I have one!”

So this year she, the dear soul, donated every single flower to my mission – that’s generosity!

Elderberry Flower Juice

40 Clusters of flowers

3 organic lemons

1 1/2 kg Raw sugar – (the original recipe asks for caster sugar to get a clear blonde juice, but I prefer to use the healthier raw sugar)

2 liters of boiling water

Rinse the elderberry flowers, put them into a big bowl. Wash the organic lemons, slice them and put them with the flowers.

Add the sugar – pour over the boiling water and stir till the sugar has dissolved.

Leave it to cool – cover it and put it in the fridge for 3 days to “brew”. Take it out and stir every day.

On the third day strain the juice through a cloth pour it in to distilled bottles. There is no preservative in the juice and therefore it will not last long. What I do to keep it fresh is to freeze it in ice-cube trays, then I can take it out as I need it. Use them as flavorful ice cubes – ie in white wine or in apple juice.

Freshly Squeezed Pomegranate Orange Juice

This time of year we need to nourish our bodies and boost the immune system. This is  a hectic time of year with lots of stress and when the body is stressed it is much more prone to catch any little bug going.

What better way to boost the immune system, than juicing some fresh pomegranate and some fresh oranges and make a truly delicious and potent drink served on ice?

I could feel every cell in my entire body wriggle with joy, while drinking it 🙂

This is a real health bomb, as pomegranate is so full of goodness and is known to lower cholesterol, high blood pressure, excellent for the skin, as well as being packed with vitamin C – so along with the oranges, this is really a health booster!

The pomegranate can be a little tricky to seed but once you get the hang of it it is quite easy. Don’t do the job wearing your best clothes as it’s really juicy and the juices will escape everywhere even if you are careful. For this serving, I used one big pomegranate and 10 oranges for 4 good sized glasses of juice.

Prepare the pomegranate by taking out the seeds, put them into the juicer and then juice the oranges – serve the drink on ice – Enjoy!

One of the easiest ways to improve your health, is by drinking fresh juice!

It is delicious! One of the most satisfying drinks on a hot summers day, is an ice cold freshly squeezed green juice – I absolutely love it!

It is vibrant and full of goodness – a straight and instant shot of health.

In the green market I found these wonderfully ripe and incredibly sweet pineapples on sale, and in my garden, I have Swiss chard – yellow and red. I love the taste of fresh chard and I use it a lot. In green smoothies and in juice but also gently sauteed with fresh ginger, garlic and a dash of soy sauce. – Today I juiced it with the ripest and sweetest pineapple. No artificial sugar or colors – just pure nature. Served on ice, it is the best summer drink you can ever imagine!

Swiss chard is a great source of anti-oxidant,  vitamin C, vitamin K and a rich in omega 3. it also is a great source of minerals such as calcium and iron.

Along with the pineapple that is rich in vitamin A and C – great source of calcium and copper – this is a power drink full of goodness and great taste.

Watermelon juice is not your everyday juice! It is packed full of goodness, it nourishes, it cleanses the body and it is deeply satisfying on a hot summers day! But, what has it to do with Viagra?…

Now to the watermelon! We usually think of watermelon as a summer fruit that tastes great, but without having any significant nutritional value. But those days are over! Watermelon is full of goodness! Scientists and researchers have found that watermelon is incredibly healthy. It is in fact a health booster, loaded with vitamin A, B6, C and full of important antioxidants!

Watermelon is alkalizing, it helps to reduce inflammation in the body.

Trying to stay healthy on the road

Here I am visiting Copenhagen – one of my favorite cities in the world and the place I was born. It is also the home town of Noma chosen as THE best restaurant in the world. Denmark is the “France” of Scandinavia and a mecca for amazing restaurants and gourmet food. Oh yes, and home of the famous Danish pastry!

Yes, you bet, temptations on every single corner!  On top of that seeing family and friends every day for lunch and being invited home for scrumptious dinners. So fantastic and at the same time so easy to make unhealthy choices.

So what to do?

For me it is about balance. I could say yes, and go out for fabulous meals at every mealtime. But I can also choose to meet for lunch at the local juice bar and join my friends for a delicious green juice. It is more about being together and green juice and socializing works  (surprisingly) well together!

If I drink a green juice and have some fruit for breakfast I get the nourishment my body needs and I feel content – content in a way that I can pass all the Danish pastries in Copenhagen without needing to eat them.

At the same time having met my needs for nourishment I can eat whatever I feel like eating for lunch.

I brought my jogging gear and a jogging tour through the old streets of Copenhagen is quite an experience a great way to see the city!

It is true it is difficult to stay healthy on the road but my biggest challenge is in reality ME. I am the one who can make healthy choices or unhealthy choices. I decide if I want to put on the jogging shoes and hit the road or stay home and eat pastries. I will do a bit of both I will also enjoy a Danish pastry and gourmet meals. Balance is the key for me.
