Chimichuri sauce – is a favourite of mine. It’s originally an Argentinian sauce, but the very first time I had it, was on a trip to Venezuela – and it was love at first sight  taste.

It has an intense and incredible flavour, given by the fresh herbs, the chilli, the lemon juice, and the garlic. It’s so good with so many things: fish, chicken, lamb, fabulous in sandwiches, drizzled on pizza, as dip for a slice of freshly baked bread, with omelet , or just served with vegetables.

I speculated on how it would taste with different things and came up with the idea of pairing it with root celery and …  it’s pretty magical!

Fresh and Crispy Nori Rolls with Ginger & Garlic Sauce

These little Nori rolls are so easy to make and they are stuffed full of goodness!

Whether you want to: lose weight, lower your cholesterol, become more healthy, …… simply adding more green food into your diet, will bring on amazing results …

Rather than restricting yourself, and cutting out certain foods, or going on a diet – you can add more plant-based foods that feed and nourish you. Thus, there will be less space for food that is not so healthy, and more room for the food that is good for you.

It’s simple, it’s easy and it can make a huge positive change to your health.

Roasted seaweed sheets

Bean sprouts

Then you roll gently, but tightly (this can be difficult, but don’t worry they taste just as good). Serve them on a plate with the Ginger Garlic Sauce

5 tablespoons of good soya sauce

1 tablespoon olive oil

1 clove of freshly squeezed garlic

A little freshly grated ginger

A little wasabi

Mix it all together.

Kick Ass Juice

It seems like every day I’m hearing people say ” Oh no, I’m going down with the flu”!

Yesterday afternoon, a dear friend of mine emailed me – “what do I do? I’m getting a cold, I feel it coming on – help”!

When I get these kinds of feelings, rather than filling myself with vitamin Cs in the form of pills, I load up on straight natural vitamin Cs! The ones you find in oranges, grapefruits, limes, lemons, kiwi, pineapple …….etc

Potent and effective as well as downright delicious!

This is what I do:

In a big jug of ice water I put slices of fresh ginger, lemon, and lime –  I was even so lucky this morning to find small fresh sprigs of mint in the garden!

It tastes delicious and it’s a great way to add natural vitamin C to your drink.

Here on the West Coast, we have a very popular local coffee brand called “Kick Ass Coffee”

Using that theme, I make Kick Ass Juice – if you try it, you will know that this is the perfect name for it!

Apart from this, for holding off the flu/cold bugs, I also drink hot and spicy ginger tea made from fresh slices of ginger, slices of lime and lemon. Just pour steaming hot water on – you can add a spoonful of honey if you like (,) Honey 🙂

This Year – Spoil yourself

Another sparkling fresh and new year has arrived.  And with that often comes the ambitious New Year’s resolutions….

I don’t really believe in New Year’s resolutions! Why?  Because so often they become yet another thing we can hit ourselves on the head with, be disappointed in ourselves about, and another proof that we have not lived up to expectations, and so on …….

Instead I’m a great believer inspoiling others including myself and when it comes to new years resolutions I much prefer to look at it this way:

In 2014, I will spoil myself by:

  • taking even more morning runs especially just while the sun is rising
  • drinking more healthy delicious green juices
  • doing more mindfulness meditation
  • participating in a hot yoga class
  • eating more plant -based meals

This approach is so much better to me than carving out hard-core goals in stone. Goals that I force down my throat, pressure myself into, and beat myself up with afterwards because I didn’t follow through with them.

And by the way – it’s not selfish to spoil yourself, actually, you become a much more pleasant person to be with. You will spread your smile and laughter more often and your relaxed and contented being will be contagious and help others feel at ease and happy too.  And you will be so much better at spoiling others!

Give time

Do you remember the time when there was no internet? No cellphones, no smartphones, no computers, no emails – just perhaps a landline, but no answering machine!

Television, yes, but no broad casting 24/7 and only a few channels to chose from.

Do you remember when the shops were closed on Sundays?

That was peace!

To me, holidays and Christmas in particular, means peace and time to reconnect with the people I love. But it seems to have become increasingly more difficult to actually create that space of complete peace. Don’t you think?

Just have a look and see how distracted we are here and  here – these stories made me laugh, but really, they are sad!

Stories of people falling down stairs while texting, someone falling off a bridge, a lady into a fountain, someone fell down onto the  train tracks at the station! All were they  “Wexting” – walking while texting.

In London they are padding the lampposts because people walk into them while texting….

People in restaurants busy on their phones and not in contact with the people they are with.

All this 24//7 online connection is making us crazy, more and more stressed and disconnected.  We are missing out on precious present moments.

So how do we create a space of peace, or at least more of it?

How about something as wonderful as an “Unplugged Holiday” ? Just a few days…… unplugged, undisturbed –  connected to the real world?

Join me on my “unplugged holiday” 

This is what I plan to do:

  •  I will turn off my iPhone over Christmas
  • unplug my computer
  • No checking email, no blogging, no twitter, no Facebook, no Pinterest

I will attempt to convince my teenagers to do the same, I know it will be a hard one, but perhaps as a role model I will inspire them further down the road.

After all THE most important gift we can ever give one another – is time, time to truly be,  present with life and with each other.

Crispy Yam with Spicy Harissa

When I was first diagnosed with high cholesterol I believed that there was nothing in this world I could do to change that. I believed that I had to be on medication for the rest of my life because I had the generic kind.  A dad and a brother on cholesterol lowering medication, a granddad who suffered a heart attack and an uncle who died. I knew this was no laughing matter, soI faithfully took my statins and didn’t ask questions.

This year I celebrate 4 years of normal cholesterol and no medication.

I did it with lifestyle changes!

An example of what I eat for lunch instead of a sandwich filled with meat and cheese.

Crispy Yams and Spicy Harissa

Crispy Yams and Spicy Harissa

3 red pepper 

1 teaspoon cumin

1 teaspoon ground coriander

1/2 teaspoon salt

1/4 cup olive oil

juice from one lemon

1 clove of garlic

1/2 -1 red chilli

Bake the peppers till they are tender and the skin almost black. Allow them to cool, tear off the skin and put the flesh in the blender. Add the rest of the ingredients and blend into a smooth and delicious sauce.

sea salt pepper

3 red pepper1 teaspoon cumin

1 teaspoon ground coriander

1/2 teaspoon salt

1/4 cup olive oil

juice from one lemon

1 clove of garlic

1/2 -1 red chilli

Slice the yams and put them on a baking tray – drizzle with olive oil, sea salt and pepper. Bake till golden brown, crispy  and tender.

Serve the crispy yams on a salad with the spicy Harrisa and a  fresh squeeze of lemon.

This dish can easily be made as dinner served with whatever takes your fancy – and it can be the perfect leftover lunch to bring to work.

Fresh herb salad with pomegranate and lemon dressing

I love Tabouleh! It’s one of my favourite salads in the world. It’s this combination of freshness and herbs that I love so much –  that creates a true sensation of party in my mouth.

I had some leftover cooked bulgur in the fridge as well as a bunch of fresh coriander, and there was fresh mint in the garden!  I also had a big juicy pomegranate laying on the table begging me to play – so inspired by Tabouleh salad, I created this:

One cup of cooked bulgur

one bunch of fresh mint

one big bunch of Italian parsley

one big bunch of fresh cilantro

one bunch of spring onions

one pomegranate

1/2 cucumber

one lemon

1/4 cup olive oil 

Sea salt

Rinse and finely chop herbs and spring onions  – mix with the bulgur in a bowl. Squeeze the lemon and stir in the olive oil, mix in the salad. Add sea salt and serve with pomegranate seeds on top. Serve and enjoy! Perfect for lunch!

While chopping away, I was thinking how much I love spending time in the kitchen, creating – for me it’s the perfect way to relax. Kitchen meditation or even kitchen therapy for my soul  – how many problems have not been solved around a kitchen table? Not to forget the amount of amazing ideas that have been given birth to in the kitchen, deep talks, laughter, and love shared in this almost sacred space of the house.
