The Power of Raw

Summertime – don’t you love it? And summertime is the perfect time to spoil your body, recharge the old batteries and rejuvenate yourself!

I find nothing quite as powerful as a couple of days on raw food,  plant-based, entirely raw dishes, full of all the goodness you need to tune yourself back into vibrant.

Here is how it goes – for breakfast how about some  Creamy Raw Food Oatmeal

For dinner Raw Food Curry served with Parsnip “Rice” 

1 red pepper

1 orange pepper

1 zucchini

5 big brown mushrooms

4 spring onions

Wash and finely chop everything – make the curry sauce

Curry Sauce 

2 big  scoops tablespoons of cashew butter

1 tablespoon of chopped fresh ginger

4 dried lime leaves or 2 fresh

1 cup of water

2 tablespoon of soya sauce

1 tablespoon sweet chill sauce

juice and rind of 1 lime fruit

1 teaspoon of Thai red curry paste

Put it all in the blender and blend into a delicious creamy curry sauce.

Parsnip “rice” 

Peel 2 parsnips and cut them into smaller pieces – put them in the blender and blend them till they look rice- alike – squeeze a little fresh lemon juice on and a little sea salt.

Serve on a plate with the chopped vegetables – pour over the curry sauce and enjoy!

Smoothie with Grapefruit, Stinging Nettles and Sweet Green Grapes

This morning was spectacular in my Danish garden – the sun, the birds, the flowers, the butterflies and an intoxicating smell of spring filled the air. I was out, bare feet in the grass breathing in spring and enjoying the early morning.

However, with spring and an abundance of spring flowers, come weeds – dandelion, stinging nettles and ground elder – they invade us and keep us busy all summer, trying to keep them under control….

But actually – weeds, such as stinging nettles are packed with goodness.  They have lots of nutrients, protein, calcium and iron among many other things, and they are so good for us  – read more here.

So I thought –if you can’t beat them, why not eat them!!!? 🙂

I covered my hands with plastic bags and picked some stinging nettles – the aroma of them were somewhat spicy, in a gentle kind of way. Which made me think that they would be amazing combined with grapefruits, in a smoothie.

Green Smoothie with Grapefruit and Stinging Nettles

A good handful of fresh stinging nettles

A bunch of sweet green grapes

One big grapefruit

One orange

A chunk of pineapple

water

Wear gloves or plastic bags on your hands while picking and cleaning the nettles, they will sting you! Wash them carefully before use.

Add all the ingredients to the blender with some ice cold water and blend into a smooth delicious powerful green drink.

It’s quite easy to become addicted to this drink – the combination is really good. The stinging nettles have this very special beautiful flavour – I loved it and I hope you will too!

Fresh and Crispy Nori Rolls with Ginger & Garlic Sauce

These little Nori rolls are so easy to make and they are stuffed full of goodness!

Whether you want to: lose weight, lower your cholesterol, become more healthy, …… simply adding more green food into your diet, will bring on amazing results …

Rather than restricting yourself, and cutting out certain foods, or going on a diet – you can add more plant-based foods that feed and nourish you. Thus, there will be less space for food that is not so healthy, and more room for the food that is good for you.

It’s simple, it’s easy and it can make a huge positive change to your health.

Then you roll gently, but tightly (this can be difficult, but don’t worry they taste just as good). Serve them on a plate with the Ginger Garlic Sauce

5 tablespoons of good soya sauce

1 tablespoon olive oil

1 clove of freshly squeezed garlic

A little freshly grated ginger

A little wasabi

Mix it all together.

Kick Ass Juice

It seems like every day I’m hearing people say ” Oh no, I’m going down with the flu”!

Yesterday afternoon, a dear friend of mine emailed me – “what do I do? I’m getting a cold, I feel it coming on – help”!

When I get these kinds of feelings, rather than filling myself with vitamin Cs in the form of pills, I load up on straight natural vitamin Cs! The ones you find in oranges, grapefruits, limes, lemons, kiwi, pineapple …….etc

Potent and effective as well as downright delicious!

This is what I do:

In a big jug of ice water I put slices of fresh ginger, lemon, and lime –  I was even so lucky this morning to find small fresh sprigs of mint in the garden!

It tastes delicious and it’s a great way to add natural vitamin C to your drink.

Here on the West Coast, we have a very popular local coffee brand called “Kick Ass Coffee”

Using that theme, I make Kick Ass Juice – if you try it, you will know that this is the perfect name for it!

Apart from this, for holding off the flu/cold bugs, I also drink hot and spicy ginger tea made from fresh slices of ginger, slices of lime and lemon. Just pour steaming hot water on – you can add a spoonful of honey if you like (,) Honey 🙂

The power of natural

This time of year is prime time for colds and flus –  people are heading for their flu-shots trying to  prevent the dreaded symptoms of flu, headaches, aching bodies, sneezing and endless running noses.

At the checkout counter in the supermarket we find not only candy to tempt us, but also bags of vitamin C powder that magically is supposed to help us fight the flu.

In my life instead of pills, tablets and bags of vitamin C,  I prefer boosting my immune system the natural way, with freshly squeezed delicious juices – that are naturally packed with fresh vitamins and minerals. Like this one, for instance, freshly squeezed carrot juice with apples, lemon and ginger, made with all fresh organic ingredients.  Carrots, filled with vitamin A, organic local apples filled with fibre, minerals, and vitamin A, B1, B2, B6, C, E, K, as well as loaded with antioxidants.  Slices of fresh ginger that are packed with goodness and always has been known and praised, for its medicinnal powers to cure all kinds of ailments such as nausea, colds etc

Along with freshly squeezed lemon, with its high content of vitamin C and  its power to clear up colds. This is a seriously healthy drink which tastes delicious at the same time!

I believe this is so much more powerful than any vitamin supplement,  it’s natural, fresh and potent. A perfect way to boost our immune system naturally.

Having fun preparing for a  “Balanced Living ” workshop I will be doing later this month – and in need of something refreshing…..

What’s  better than a glass of freshly squeezed cool juice?

Summer is the perfect time for juicing – there are an abundance of delicious sun-kissed fruits and vegetables available – so I decided to make the perfect “instead of coffee drink” …..a glass of freshly squeezed baby beets!

In this juice I added lots of sweet crispy local apples, a lime,  a bunch of mint and a slice of fresh ginger.

Enjoyed outside in the shade ……..

It tastes so good and while you drink, you are getting incredible amounts of fruits and greens – nutrients that goes straight into the body, to feed, rejuvenate and nourish it.

Green Smoothie with Spinach, Mango, Lime and Mint

The atmosphere in our house is really intense – the teenagers are preparing for exams and they are studying like crazy, really hard!

Green smoothies are the perfect energy kick to feed and nourish  mind and body.

At this time of year, the stores are booming with fresh, soft, sweet and delicious mangos. They are the perfect snack and fantastic in green smoothies.

Here is a smoothie for the hard-working teens (or others) – a real kick of greens!

This smoothie is delicious. It’s sweet, intense, powerful and refreshing! A perfect way to boost your concentration and refresh your mind – as well as refreshing and anti-oxidizing your body.

Green Smoothie with Spinach, Mango, Lime and Mint 

1 good handful of fresh spinach

2 ripe mangos

3-4 twigs of fresh mint

2 lime fruits

Ice

Put the peeled and roughly chopped fruit and herbs in the blender along with some ice and water. Blend until smooth, cool and fabulous.

Spinach Grapefruit Smoothie

Smoothies for breakfast, as part of lunch, as a snack, before dinner – smoothies for any occasion ……..

But smoothies have also become THE number one “Fast Food” in our family. In a hurry, on the go, no time to cook or even eat – no problem, spin up a smoothie and away you go. Quick, nutritious and satisfying!

Today I made a green smoothie with spinach and grapefruit. I love grapefruit, but for 12 years I wasn’t able to have grapefruit! I was on cholesterol medication and something in grapefruit doesn’t mix well with that kind of medication.

Since I changed to “balanced living” and added lots of plant-based foods to my diet and started exercising, I no longer need medication to control my cholesterol!

There are, as you can imagine, many benefits connected to that – one great one is, I can enjoy grapefruits again 🙂

One bunch of fresh spinach

2 grapefruits

One bunch of red or green grapes

1 banana

1  slice of fresh ginger

2 Medjool dates

2 cups of filtered water

Ice

Put it all into the blender and blend into a refreshing, smooth, cool and delicious drink.

We are enjoying beautiful spring weather here on the West Coast of British Columbia.

This morning I decided I would make a true “Awaiting Summer Smoothie” – because to be honest with you, I crave summer like crazy!

I had some deliciously ripe mangos (juicy and sweet)

some fresh pineapple,

and a cute pear with red cheeks.

Some fresh mint, freshly squeezed juice of lime and some cool coconut water.

For 4 people:

1/2 pineapple

1 pear

1 big mango

1-2 lime

2 sprigs of fresh mint

2 cups of coconut water

Put it all in the blender along with some ice to cool it down. Blend into a fabulous nutritious and delicious drink.
